Miss Gray’s Carrot and Yoghurt Muffins

Dear Parents,
you may have noticed that Mr Wagenfeller was away unwell this week and Miss Gray ably stepped into the breach, preparing yummy lunches for us. On Wednesday she cooked us special muffins for afternoon tea and what a hit they were!!! You might like to try the recipe at home.

2 cups of self-raising flour
½ cup of sugar
½ cup of oil
1 cup of fruit yoghurt (we had strawberry yogurt in ours, yum yum!!)
1 egg
1 medium carrot, peeled and grated

Preheat oven to 180 oc. Mix all the ingredients together in a bowl until the mixture just starts to come together. The batter should look slightly lumpy (Don’t over beat!) Spoon into a greased muffin tray, filling to about 2/3 full. Bake for 20 – 25 minutes.
